Spawning Sockeye Salmon – underwater footage [HD]. Just a short time after the Sockeye Salmon (kokanee) are in the streams sporting their crimson red color, they will all die. That is their life cycle, just a few years of living, then returning to spawn in the river where their life started, spawning to ensure the survival of the species and after that death. Watching these fish struggling up the current with determination I was left wondering do they know that when all is done this is their final curtain call? Some sockeye live and reproduce in lakes and are called “kokanee”, a word in the Okanagan language for this kind of fish. They are much smaller than the ones that go to the ocean and are rarely over 350 millimetres (14 in) long. In Okanagan Lake and many others there are two kinds of kokanee populations – one spawns in streams and one spawns in the lake near the shore. Until a few years ago Salmon was considered a fish in the luxury price bracket. For most people the only salmon they had ever tasted came in tins and even then was considered a treat. However, with the growth of salmon farming around the world the price has fallen so that salmon is now inexpensive and freely available.

The salmon is closely related to the trout and the sea trout is often referred to as salmon trout. Salmon is an oily fish that is easily recognized by its pinkish flesh. When cooked or smoked it can be enjoyed as either a hot or cold dish.

Although fish farming has brought down the cost of salmon some experts believe it has also led to a fall in quality. Initially there was also another problem with farmed salmon being prone to disease due to too many too many fish being kept in a restricted area. This has now been overcome to some extent by improved knowledge and techniques within the fish farming industry. Even so there is little doubt that wild salmon is tastier than the farmed variety.

The wild Atlantic salmon is considered by many to be the very best of the salmon varieties but the Atlantic salmon is now in short supply and consequently quite expensive and difficult to get. The Pacific Salmon is popular and there are six different varieties which are the Sockeye, Chum, Chinook, Coho, Steelhead and Pink Salmon.Salmon are born in fresh water and migrate to the ocean later in life. Amazingly salmon return to the place of their birth to spawn and this has been confirmed by scientists using the latest tracking equipment. No one is absolutely certain how this homing instinct works.When it comes to cooking, the salmon is a very versatile fish and can be served as a starter, fish course or main meal. Possibly the best way to cook the fish is by poaching it in salted water. The fish can be poached whole or as stakes or fillets. Other options for cooking salmon include grilling or frying.

Whilst salmon can be eaten just as it comes out of the pan it does benefit from the addition of a sauce or dressing. Lemon is a good accompaniment and helps to counteract the rich flavor. A hollandaise sauce added to a warm dish or mayonnaise if the fish is being served cold can help to enhance the flavor. Baby new potatoes and a green salad are the ideal accompaniment to a salmon dish.

Smoked salmon is now much cheaper and more plentiful than it used to be and it can be used as a filling for sandwiches, served on its own, with lemon and brown bread as a starter or with scrambled eggs as a breakfast treat. Next time you are looking for something different to serve think of the salmon, versatile, simple to cook and very tasty.

Salmon is a great fish to work in to your diet and it’s good for you too. Full of Omega 3, a “good fat” that may reduce the risk of heart disease, diabetes and more. Salmon is also a good source of B12, Niacin and vitamin D. In this simple salmon recipe, Rita shows you how to sauté salmon filets in a cast iron skillet and finish them in the oven. Great for a crowd, an easy recipe like this salmon recipe make quick work of your time in the kitchen. Simple ingredients that you can adapt are a great part of this salmon recipe. A bit of seasoning, lemon and the option of lemon grass round out this dish. Here’s my current fave: Ritas Master Seasoning Mix together and store airtight at room temp 4 tablespoons sea salt 2 tablepoons freshly ground black pepper 1 generous tablespoon garlic powder (or more to taste) 2 teaspoons paprika 1 teaspoon celery salt Even Better: For seafood and grain dishes: reduce pepper to 1 tablespoon and add 2 tablespoons lemon pepper seasoning to the mix.
